When grocery shopping this weekend, I was faced with the task of using up various leftover foods. Typing the two main ingredients into Google really didn't yield any results, so I decided to make something up. The end result was really pretty good for something I pulled out of thing air--and the fiance loved it, which is even better.

Rosemary Orzo
Sometimes, you just want a solidly delicious side dish. In my case, this recipe was meant as a base for Chicken Provencal. And while the Chicken Provencal was delicious (and will receive its own entry), this orzo was great on its own. And so easy!

Fettuccine and Tofu with Finger-Lickin' Peanut Sauce
This was just too tasty. It was more spicy than I thought it would be, so if you're sensitive to heat, I'd cut down on the chile paste accordingly. Though the instructions are unbelievably small, you have a lot of chopping and measuring to do, so plan on this taking more time than you'd think. I believe it took me about 40 minutes from start to finish. Overall, it was worth the effort. It was very flavorful without me tweaking the spices in the recipe, and I loved how spicy it was. Plus, now that I have rice wine vinegar and chile paste, I'll be making it again!

Stewed Garbanzo Beans with Zuc-Quinoa
This is one of the only 100% vegan recipes I've ever made (consciously, anyway). It's incredibly healthy and is a lot easier than I anticipated. You chop some stuff, saute a bit, and the rest cooks itself. The only pricey ingredient is the quinoa, but it seems that one bag of it will last you forever. I really enjoyed the stew-like heartiness to this. The only thing I'll do next time is add minced garlic--that might be just what the sauce was missing.

Linguine with Basil-Pea Cream
So, I expected this recipe to be good (and would have been shocked if it were bad). It far exceeded my expectations--it was *fantastic*. The fresh basil really packs a punch, as you'd assume, but otherwise, it's got a fairly delicate sauce. I used a touch more garlic than you're supposed to (as well as salt), but I'm a garlic and salt fan. It was pretty easy, too, though you have to drag out the blender.

Cashew Chicken
--This is a recipe I picked up somewhere when I was a teenager, and remember it being quite good. I made it again recently with some modifications, and it was fantastic! It looks complicated, but it's not too bad, and is completley worth your trouble. This version of the recipe includes my modifications. The original didn't include the extra spices I note, nor did it have the yellow pepper, bamboo shoots, or chicken thighs.

Best-Ever Chocolate Chip Cookies
--Easily modified to be "Best-Ever Chocolate Chip and Peanut Butter Cookies." The best recipe I've ever used, hands down. Heavy, chewy cookies that are positively sinful.
